ELORA – The Elora Distilling Company was at the July 29 council meeting asking for support from Centre Wellington for its Manufacturer’s Limited Liquor Sales Licence application to the Alcohol and Gaming Commission.

“This is similar to the Elora Brewing Company’s license that council had also supported,” said managing director of planning and development Brett Salmon.

The distillery, located at 102 Metcalfe Street in Elora, is currently under construction. The “by the glass” license will allow alcohol consumption at the site as well as sales.

“This special form of liquor licence will allow us to serve the alcoholic products that we will be producing for the purposes of showcasing our products, educating our customers on the ‘grain to bottle’ distilling process and promoting our distillery as a premier tourist destination,” company secretary Mark Anderson wrote in a letter to the township. He noted the licenced area will be open from 11am to 9pm.

Council supported the application.
